Mom's Easy Gazpacho

​My mother, Bernice Mazer, gave me this wonderful Gazpacho recipe a while ago. It is the best and easiest Gazpacho I know. Although this is the basic recipe, Gazpacho is extremely versatile. Feel free to use different combinations of vegetables in varying amounts. It's pretty hard to mess up this Gazpacho--in fact, I don't think I've had a failure yet!  This soup is a wonderful staple to have in your fridge in the hot summer months. It's cool, refreshing and easy: just pull it out of the fridge and you have an instant meal! 

​Ingredients: 

1/2 clove garlic, peeled
1/2 small onion, quartered
1/2 red or green pepper (I prefer red)
1 tsp. salt
1/4 tsp. pepper
2 Tbsp. extra virgin olive oil
3 ripe tomatoes or 2 large, quartered
1 cucumber, peeled and chopped
2 1/2 Tbsp. wine or apple cider vinegar
1/2 cup tomato juice

Put all the ingredients in food processor or blender and puree to consistency you prefer.
