Homemade Red Salsa
This is the salsa everyone pictures when you talk Mexican food. Though you can easily find it in most grocery stores, homemade is superior to the bottled brands and very easy to make.
Makes 2 cups
1 large garlic clove
1 medium onion
2 large tomatoes or 2 cups cherry tomatoes
1/4 green pepper
1/2 red pepper
Juice squeezed from 1/4 lime
1/4 tsp. salt
Cut all vegetables roughly and place in blender or food processor. Add rest of ingredients. Puree until somewhat liquidy but still chunky. Keeps for about a week in refrigerator.
* When working with hot peppers such as jalapenos, make sure to wear gloves and REMOVE them before touching eyes, nose or mouth.
