Flax and Chia Eggs

​If you are allergic to eggs, are watching your egg intake, or just want to try something different, flax and chia eggs are excellent egg replacements. They are full of health benefits and very easy to make. Here's how you do it: 

If the flax or chia seeds are not pre-ground, you must grind them first. This is especially true of flax seeds, as humans cannot digest whole flax seeds and they basically, just travel right through your body with no health benefits. To grind, simply put the seeds in a coffee grinder (they are too small to grind in a food processor) and let it go for about 30 - 60 seconds. The seeds should now be a fine consistency. 

To make 1 egg equivalent:  measure out 1 Tbsp. flax or chia seeds. Put in a bowl. Next measure out 3 Tbsp. water and pour into the seeds. Let the mix sit for at least 10 minutes in order to allow the seeds and water to gel together. After 10 minutes, you will see that the mix is now thicker and more gelatinous. This is especially true of the chia seeds.
