Cream of Corn Soup

This delicious soup was quite a hit at my class. The natural sweetness of the corn mixed with the savory onions is a delight. 

Ingredients:
2 15-oz cans or 2 20-oz. bags of corn
1 Tbsp. canola oil
1 onion, chopped
2 cups water
1 tsp. salt
1/2 tsp.pepper
2 cups soy milk

Heat oil in a saucepan and add onions when hot. Saute onions until browned, about 5 minutes. In a large soup pot, place corn, onions, water and soy milk. Add seasonings. Bring almost to a simmer on medium heat then turn down to low. Continue to simmer for 20 minutes.
