Chocolate Brownie Cake
My kids love this cake. I undercook it just a bit so it becomes very gooey and moist. In this particular recipe, I like to use chia or flax eggs instead of regular eggs, just to give the cake a healthy boost!
Ingredients:
1 cup cocoa
2 cups coconut palm sugar or date paste
2 cups whole wheat flour
8 eggs or 8 chia/flax eggs
1 cup canola oil
2 tsp. baking powder
1/8 tsp. salt
1 cup ground walnuts or almonds (optional)
If using flax or chia eggs, make now and set aside so they can gel for at least 10 minutes.
Preheat oven to 350 degrees.
Grease an 11 x 14 inch baking pan and set aside.
Combine cocoa, coconut palm sugar, flour, baking powder and salt. Whisk well with a fork. Add oil and nuts, if using, and mix very well. Finally, stir eggs into the mixture and make sure it is well-combined.
Pour into greased pan and bake 35 minutes. Cool for about 15-13 minutes and then cut into squares.
Extra Health Boost: Add 1/3 cup pureed spinach. The spinach taste or color cannot be detected in the recipe and adds healthy benefits to your cake!
