Tuna Wraps with Dijon Mustard Dressing
Tuna wraps are really easy to make, once you get the hang of rolling the tortillas. By the way, it goes without saying that I use whole wheat tortillas! Here is the step-by-step process of making a perfect tuna wrap--or any kind of wrap, for that matter!
Start with the open tortilla on a plate and spread the dressing over it. I like to use a liberal amount because I have kids that need to gain weight (whoever would think that possible in my family!). Put on accordingly for your family.

2 cans albacore tuna
1/2 - 1 Tbsp. lite mayonnaise
5 romaine leaves
5 whole wheat tortillas
For the dressing:
2 Tbsp. lite mayonnaise
1 Tbsp. Dijon mustard
Mix the tuna in a bowl with the mayonnaise. Set aside.
Make the dressing. With a teaspoon, spread the dressing on a whole wheat tortilla. Add the tuna and then the romaine.
To roll, fold in the sides of the tortilla. Next, starting with the side closest to you, start rolling the tortilla upwards. You may need to continue folding in the sides and pushing the filling down as you roll upwards. That's ok because it makes for a nicely tucked-in tortilla.
When fully wrapped, put roll on a plate and cut in half for easier handling.
