Hearty Chicken Vegetable Soup
I have another reason for posting this recipe. After fasting all day, it's really important to break the fast with some kind of protein in order to avoid the ol' blood sugar surge and crash. What could be more stabilizing, hearty and soothing that old fashioned chicken soup! So, fill up a bowl and enjoy!
1 package chicken leg quarters
1 1-lb. package carrots, peeled and chopped
1 large onion, peeled and chopped
6 sprigs of celery
1 small pack frozen corn
1 large tomato
Salt and pepper to taste
Fill a large soup pot 1/2 full of water. Place chicken quarters in the pot, along with all the other ingredients. Bring to a boil. Once boiled, turn heat down to low. Simmer the soup all day. Eventually, the liquid will cook down and the carrots will caramelize, adding a wonderful texture and flavor to the soup. If you need to, once carrots have caramelized, you can add more water if you are low on liquid.
