Extra Virgin Olive Oil
Ok, we've all been bombarded with information glorifying the health benefits of olive oil, so no need to go into that here. Suffice it to say, olive oil is a great choice for a fat. The healthiest of the olive oils is extra virgin olive oil, first cold pressed, for no heating or chemicals are used in its processing. It also has the purest flavor. Olive oil does have a strong taste, though, so if you are baking or making a dish that requires more delicacy, you may want to use a different oil.
