Walnut Crusted Salmon
Tried this recipe out tonight. A real winner--even the kids liked it!!!
6 salmon fillets
1 cup ground walnuts
1 tsp. garlic powder
1 tsp. onion powder
1/4 tsp. salt
Olive oil for coating
Preheat oven to 350 degrees.
Wash salmon fillets and pat dry. Put a bit of olive oil in a bowl. Using a brush, coat fish thinly so that walnut mixture will stick.
In a separate bowl, combine ground walnuts and spices. Dip fish on both sides until well-coated. Place fillets on a foil-covered baking sheet. Bake for 6 minutes on one side, then turn fillets over and bake 6 minutes on the other side. The salmon should be flaky and moist, but not raw. If it appears raw, bake for 2 more minutes then check. Be very careful to not dry the fish out; some moisture is normal and good.
Salmon Sushi Salad
The first time I tried sushi salad was at my friend, Rivka Malka's house. What a different kind of taste sensation! This is a variation, inspired by my dear friend.
3 salmon fillets, already cooked
1 cup cooked sushi or white rice
1 red pepper, chopped
1 yellow pepper, chopped
2 cucumbers, peeled and sliced
Wasabi-Soy Sauce Dressing (below)
Combine all ingredients and enjoy!
To make Wasabi Soy Sauce Dressing: Combine 2 Tbsp. sesame or canola oil, 1/2 cup low sodium soy sauce and 1 tsp. wasabi. Mix thoroughly and pour over salad.
This is actually a recipe for Salmon Croquettes, but I thought it would be fun--and delicious!--to make these into burgers.
1 can salmon
1/2 tsp. onion powder
1/4 tsp. salt
2-3 Tbsp. canola oil for frying
First prepare the potato: Peel and cut into quarters. Boil until tender and mash in a bowl until there are no lumps.
Empty salmon into a separate bowl and mash until it looks like tuna. Don't remove the bones; they are soft and will crush. Plus, they add important nutrients. Put in potato and egg and mix well. Add the onion powder and salt. Stir until well-combined.
Heat a frying pan with oil. Wait until oil is hot. Remove a tablespoon of the mixture and form into patties. Repeat until all the mixture is used. Let fry until bottom is very brown. Turn over with a spatula and brown on other side. Takes 3 - 5 minutes for each side. Remove and serve with toppings.
