Vegetarian Black Bean Chili
Don't have lots of time to write now before Pesach, so here we go with the recipe.....
1 can black beans
1 small or medium onion, chopped
1 medium tomato, chopped
1 can corn or 1 small package frozen corn
1/2 tsp. salt
1 tsp. each: onion powder, cumin, chili powder
Pepper to taste
Saute the onions until they start getting translucent. Add the tomatoes and continue cooking until soft and the onions are somewhat brown. Add the beans and corn. Add spices. Let simmer for 15 minutes, until the flavors have all combined well.
**For an extra kick, add jalapenos.
**Eat with salsa and chips.
**Can also spread some cheese on top. Yum!!!
