Chocolate Chip Cookies
Hope you enjoy the recipe and have a very simchadig Simchas Torah!
1 cup oat flour (use GF oats/oat flour if making this GF)
3/4 cup almond flour
1/4 cup ground flax seeds
*If you don't want to make this recipe GF, simply replace the above ingredients with 2 cups whole wheat flour
1 cup coconut palm sugar
1 cup date paste
2 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon
1 cup canola or coconut oil
1 tsp. vanilla extract
1 cup rolled oats
1 cup chocolate chips
Preheat oven to 350 degrees. Line 2 baking sheets with parchment paper or foil (if using foil, grease). Set aside.
Put flours, flax seeds, coconut palm sugar, salt and cinnamon in a large mixing bowl. Whisk well with a fork. Add the date paste, oil and vanilla extract. Mix well. Fold in the oats and then the chocolate chips.
Form into 1 inch balls and set on baking trays 2 inches apart. Bake for 6 minutes. Rotate trays then bake for another 6 minutes. Remove from oven and cool for at least 10 minutes before touching, as cookies will still be soft, but harden in about 10 minutes.
